The three hot wires are A, B and C . A 120 volt single phase circuit uses one breaker “space” on this box that is 1 inch wide. A 240 or 208 volt single phase circuit uses two breaker “spaces” on this box. A 240 or 208 volt three phase circuit uses a 3 phase breaker that is 3 inches wide and it uses all phases of A, B and C. A restaurant often is wired a 3 Phase service as 120 volt / 208 volt 3 phase. Big loads like the AC run off the 208 volt 3 phase and use a 3 pole breaker that uses phases A, B and C. The small stuff often use plain single phase 120 volts and each circuit uses one hot phase and the Neutral buss bar.
